<span style="color: #006600; font-size: 130%;">1/2 c vinegar<br />3 heaping Tablespoons mustard<br />1 small can tomato sauce (not paste)<br />1-2 lemons juiced and I put the sliced peeling in too<br />1 stick butter<br />2-3 cloves garlic (minced)<br />1 teas. red pepper<br />1 teas. black pepper<br />1 teas. salt<br />1/2 c water</span><br />
<span style="color: #6600cc; font-size: 130%;">Bring to a boil,<br />stirring, just to melt the butter,<br />then just take off heat to cool.<br />I love this and have used it for many years.<br />You can add your favorite Sugar Free sweetener too.<br />But I like it tart without any sweeteners..<br />It's great for chicken or pork.<br /><span style="font-size: 180%;"><span style="font-size: large;"><span style="color: #cc0000;">When grilling meat, pork or chicken,</span><br /><span style="color: #cc0000;">let your meat cook till almost done before</span><br /><span style="color: #cc0000;">adding the sauce to it. Makes about 9 small biscuits or 6 medium biscuits<br />

1 small biscuit: 100 calories, 8 grams of Fat, 1 Net Carb & 3.5 grams of Protein<br />

**Finish with Salted butter & dried or fresh parsley

<b><span style="color: #b45f06;">Preheat oven to 350 degrees F. In a medium bowl, mix dry
ingredients. Then add remaining ingredients and mix with a wooden spoon
or spatula until well blended. Use <a href="https://www.facebook.com/notes/low-carb-motivation-and-recipes/red-lobster-biscuits-oh-my/506824882738039#" role="button">scoop</a> to scoop out dough onto un-greased cookie sheet lined with <a href="https://www.facebook.com/notes/low-carb-motivation-and-recipes/red-lobster-biscuits-oh-my/506824882738039#" role="button">parchment paper</a> . Space 2-3 inches a part. Bake for 13-15 minutes
for small biscuits and 20 minutes for medium biscuits. Once out of
oven, smear a bit of salted butter and sprinkle with a little parsley.

I have chosen a low carbohydrate way of eating or diet because I'm diabetic and this diet keeps my blood sugar numbers close to normal. That's important, so I won't have all the symptoms of diabeties. this way of eating has already helped me to lose weight and cut way back on my meds plus I feel so much better!<br />
I eat meats, cheese, salad vegetables and other low carb veggies.<br />
No wheat or sugars or starches at all. Drink lots of water because it's so good for you.<br />

Breakfast example:<br />
eggs, cheese, and bacon.<br />
coffee and water<br />
<br />
Lunch:<br />
salad with deli meats added and oil and vinegar dressing.<br />
<br />
Supper:<br />
grilled meat, salad, and veggie like cauliflower or broccoli.<br />

<b><span style="color: #351c75;">We, my husband and I, took on looking after my parents a year after </span></b><br />

<b><span style="color: #351c75;">My Dad (born in 1910) had Alzheimer disease.</span></b><br />
<b><span style="color: #351c75;">My Mom (born in 1918) just could not look after him in Florida, by herself.</span></b><br />
<b><span style="color: #351c75;">He passed away 2 1/2 years after they came to live with us.</span></b><br />
<b><span style="color: #351c75;">But Daddy's story is different than Mom's.</span></b><br />

Spring is here finally!</span></span><br />
<span style="font-size: small;"><span style="color: #0b5394;">We grill outside almost every day in good weather.</span></span><br />
<span style="font-size: small;"><span style="color: #0b5394;">Today it's center cut boneless pork chops.</span></span><br />
<span style="font-size: small;"><span style="color: #0b5394;">No , I'm not extravagant at all buying this cut of meat.</span></span><br />
<br />
<span style="color: #990000;">We buy the pork loins when they are on sale, </span><br />
<span style="color: #990000;">have them cut and freeze them in freezer bags.</span><br />
<span style="color: #990000;">We usually buy 3 or 4 whole loins at about $14.00 a piece.</span><br />
<span style="color: #990000;">Rick was in the grocery business for many years</span><br />
<span style="color: #990000;"> and has taught me how to shop cheap.</span><br />
<span style="color: #990000;">When items are on sale, stock up on them!</span><br />

<span style="font-size: small;"><span style="color: #38761d;">We are very careful about how we freeze it.</span></span><br />
<span style="font-size: small;"><span style="color: #38761d;">I use the vacuum sealer bags when I have them,</span></span><br />
<span style="font-size: small;"><span style="color: #38761d;"> some times I run out and just use the freezer zip locks, </span></span><br />
<span style="font-size: small;"><span style="color: #38761d;">but be sure you get as much air out as you can and seal really well.</span></span><br />
<span style="font-size: small;"><span style="color: #38761d;">We buy steaks, ground chuck, chicken breast , whole chickens, sea food</span></span><br />
<span style="font-size: small;"><span style="color: #38761d;">usually around 1/2 price or better. </span></span><br />
<span style="font-size: small;"><span style="color: #38761d;">You name it, we have it frozen.</span></span><br />

<span style="font-size: 130%;"><span class="messageBody translationEligibleUserMessage">October 2011:<br />I just came home from my doctor's appointment, every 3 months,<br />check up for pain management (spinal stenosis) and diabetes check.<br />My doctor was amazed!!<br />No more pain meds prescribed,<br />cutting one of my diabetic pills in half for 1 week<br />then stopping it altogether (glucotrol).<br />She said it causes weight gain, OMG!<br />Cutting my insulin way way down.<br /> Will go off the metformin in a month or 2. (it's the one that causes awful diarrhea)<br />She said I will definitely NOT be diabetic much longer, if I kept this up.<br />She even said that she was going to have to "re-think" her own diet, as a vegetarian.<br />My A1C was 5.5. she almost fainted..this time last year, it was 8.6.<br />4.5 to 5 is normal and not diabetic!!!!!<br />also I had lost 15 pounds since my last visit.<br />I'm so happy!!! and getting healthier every day,<br />Thanks to Dr. Atkins and all my low carb friends!<br />Blood pressure normal also....<br />love you all,<br />joan</span></span></h6>

I finally had a chance to try some Heinz Reduced Sugar Ketchup (formerly
called Heinz One Carb) and wanted to get as close as I could to
creating a good copycat ketchup. My biggest stipulation was that I
didn't want to have to cook my ketchup. I wanted it to be just as easy
to whip up as my previous <a href="http://www.genaw.com/lowcarb/better_heinz_ketchup.html">recipe</a>.
I think I've come pretty close to the Heinz. The main things that are
missing in my recipe are the deeper, cooked flavor and the excess salt. I
decided not to try and copy the saltiness since I thought the Heinz was
overly salty. I used 1/2 teaspoon salt, but feel free to try up to a
full teaspoon if you want yours to be as salty as the Heinz. I like the
consistency and flavor of this version much better than my <a href="http://www.genaw.com/lowcarb/better_heinz_ketchup.html">Better "Heinz" Ketchup</a>.
Adding tomato sauce made all the difference. Even if this isn't
identical to the Heinz ketchup, I think it tastes very good and I'm
happy with the flavor.

In case anyone is interested, I figured out one day that it costs about
$.97 to $1.16 to make a batch of this ketchup. I have to pay an average
of $2.00 for a 14 ounce bottle of Heinz <nobr><a class="FAtxtL" href="http://www.genaw.com/lowcarb/evenbetter_heinz_ketchup.html#" id="FALINK_1_0_0">low carb</a></nobr> ketchup depending on where I buy it.

<span style="font-family: arial; font-size: small;">
UPDATE 3/16/11: I made a few tweaks to the recipe this time. Except for
the salt, I doubled all of the seasonings. I also added the equivalent
of another tablespoon of sweetener. The recipe above still calls for the
original quantities. I didn't edit it because the recipe is still good
made that way. This time I simmered the ketchup on the <nobr><a class="FAtxtL" href="http://www.genaw.com/lowcarb/evenbetter_heinz_ketchup.html#" id="FALINK_2_0_1">stove</a></nobr>
for about 20-30 minutes and I think that helped blend the flavors a
little better. It also helps the constency greatly. Cooking gives the
ketchup a smoother texture and it doesn't separate and get watery over
time like the uncooked version does. I do recommend covering the pot
because the ketchup will get too thick otherwise.

Crispy Dill Pickles: Just Like Klaussen’s</h2>
As promised, this is the tried-and-true dill pickle recipe I have
used and shared with others for years. They taste just like the
Klaussen pickles. I have made them with whole cucumbers and cut
cucumbers. My favorite dill pickles are made with the small, whole
pickling cucumbers. The cucumbers can be spear-cut, sliced, or cut in
chunks — use what you have.<br />
One of the “secrets” to making crispy dill pickles is to cold-pack
the pickles in hot, sterilized jars. The other “secret” is to time the
water bath precisely.<br />
You will need about 16 4-inch long cucumbers, or 12 large cucumbers that can be chunk-cut or spear-cut.<br />

<strong>Crispy Dill Pickles</strong><br />

<li>Cucumbers (see above description)</li>
<li>12 large garlic cloves, peeled</li>
<li>4 heads fresh dill</li>
<li>2 hot red peppers or 1 t. crushed hot red pepper flakes</li>
</ul>
Brine:<br />
<ul>
<li>2 1/2 cups white vinegar</li>
<li>2 1/2 cups water</li>
<li>1/4 cup pickling salt</li>
</ul>
Prepare canning jars and lids (wash, then sterilize).<br />
Chill the cucumbers in a <nobr><a class="FAtxtL" href="http://woodridge.wordpress.com/2009/08/09/crispy-dill-pickles-just-like-klaussens/#" id="FALINK_3_0_2">refrigerator</a></nobr> overnight if possible. Remove when you are ready to begin cold-packing the cucumbers in the jars.<br />
Wash the cucumbers to remove any debris or garden soil. Leave the
small ones whole; with larger cucumbers, cut in chunks, spears, or
slices. Pack the chilled cucumbers into 4 sterilized pint jars. To each
pint, add 3 whole, peeled cloves of garlic, 1 head dill, and 1/2 hot red
pepper (or 1/4 t. pepper flakes).<br />
Make the brine: Mix the vinegar, water, and pickling salt in a
stainless steel saucepan and heat to the boiling point. Pour hot brine
over the cucumbers in the jars. Seal and place in a boiling water bath
for 5 minutes, marking the time as soon as you put the jars in. If you
leave the jars in the boiling water bath longer, they will get soft.<br />

<span style="color: #3333ff;">I made one of my favorite snacks today,</span><br /><span style="color: #3333ff;"> pickled celery.<br />Here's what you need:<br /><br />1 quart jar w/lid<br />1 bunch of celery<br />1-2 teas. salt<br />1 teas. dried red pepper flakes<br />vinegar<br />water<br /><br /><span style="color: #006600; font-size: 130%;">First I wash the celery and cut the ends off.<br />(I freeze the discarded tops of celery to use in soups or stews later)<br />I </span></span><span style="color: #006600; font-size: 130%;">cut each piece into 6-8 inch long pieces.<br />Then slice it down the middle to make thin pieces.<br />Put celery into a quart jar and add 3 parts vinegar<br />(just pour vinegar into the jar, over the celery to fill jar 3/4 full)<br />and then fill the rest with water.<br />Add about 1- 2 teaspoons of salt or to taste.<br />I always add dried red pepper flakes also for a little kick.<br />Put the lid on and shake jar.</span><span style="color: #cc0000; font-size: 130%;">Let this sit in fridge over night,<br />if you can stand waiting, then dig in.<br />I really love these celery pickles!!<br />Rick doesn't care for vinegary stuff so I can eat um all, if I want!!</span><br /><span style="color: #993399; font-size: 130%;"><span style="color: #993399; font-size: 130%;">Sometimes I will add sliced radishes, bell peppers, turnips, carrots ...anything like that is good.<br /><br />If this is too tart for you, add a pack of Splenda to it to cut the vinegar taste.</span></span><span style="color: #009900;">Also I hope all yall can find pork rinds/pork skins at your local grocery stores.</span><br /><span style="color: #009900;">They have no sugar and no carbs, very tasty crunchy tid-bit snacks!!</span><br /><span style="color: #009900;"></span>

a pot of salted water to a boil and cook the zucchini whole until they
start to become tender, about 10 minutes. Drain the zucchini, and set
aside to cool. Once cool, slice the zucchini in half lengthwise and
scoop out the center flesh, leaving a 1/4-inch thick shell around the
entire zucchini. Chop the scooped-out zucchini flesh. </span></span></span></li>
<li style="color: #6633ff;"><span style="font-size: 130%;"><span class="plaincharacterwrap break">
Melt the butter in a large skillet over medium
heat. Cook and stir the mushrooms and sweet red pepper until tender and
the mushrooms release their juice, about 5 minutes. Stir in the flour
and oregano, then stir in the reserved chopped zucchini flesh and
Monterey Jack cheese. Heat the mixture until the cheese is melted and
the filling is hot. Stuff the filling into the hollowed-out zucchini;
sprinkle each with about 3/4 tablespoon of Parmesan cheese.

Broil the zucchini until the filling is bubbling
and the cheese is browned, 3 to 5 minutes. </span></span></li>

<br /><span style="color: #006600;">After boiling the zucchini as above,</span>
<br /><span style="color: #006600;">scoop out innards,</span>
<br /><span style="color: #006600;">put about </span>
<br /><span style="color: #006600;">1 tablespoon of Great Value (Wal-Mart brand) pizza sauce inside.</span>
<br /><span style="color: #006600;"> top with grated cheese</span>
<br /><span style="color: #006600;">top that with pepperoni slices</span>
<br /><span style="color: #006600;">and grated Parmesan cheese.</span>
<br /><span style="color: #006600;">Bake about 15-20 minutes at 400 degrees.</span>
<br /><span style="color: #006600;"> I cooked these longer than the
top ones because the inside were cooked already in other ones, these I
wanted the sauce to get hot and cook into all the other ingredients as
well.</span>

<span style="color: #006600; font-size: 130%;">1/2 c vinegar<br />3 heaping Tablespoons mustard<br />1 small can tomato sauce<br />1-2 lemons juiced and I put the sliced peeling in too<br />1 stick butter<br />2-3 cloves garlic (minced)<br />1 teas. red pepper<br />1 teas. black pepper<br />1 teas. salt<br />1/2 c water</span><br />
<span style="color: #6600cc; font-size: 130%;">Bring to a boil,<br />stirring, just to melt the butter,<br />then just take off heat to cool.<br />I love this and have used it for many years.<br />You can add your favorite Sugar Free sweetener too.<br />But I like it tart.<br />It's great for chicken or pork.<br /><span style="font-size: 180%;"><span style="font-size: large;"><span style="color: #cc0000;">When grilling meat, pork or chicken,</span><br /><span style="color: #cc0000;">let your meat cook till almost done before</span><br /><span style="color: #cc0000;">adding the sauce to it. Because tomato based<br />sauces will burn fast.</span><br /><span style="color: #cc0000;">I usually add it during the last 10-15 minutes of grilling.</span></span><span style="color: #cc0000;"><span style="font-size: large;">Will keep in the refrigerator for a week or two.</span></span></span></span><br />
