My Uncle's BBQ sauce recipe from the 1950's LOW CARB

BBQ Sauce Recipe low carb home made


My recipe for BBQ sauce:





1/2 c vinegar
3 heaping Tablespoons mustard
1 small can tomato sauce (not paste)
1-2 lemons juiced and I put the sliced peeling in too
1 stick butter
2-3 cloves garlic (minced)
1 teas. red pepper
1 teas. black pepper
1 teas. salt
1/2 c water

Bring to a boil,
stirring, just to melt the butter,
then just take off heat to cool.
I love this and have used it for many years.
You can add your favorite Sugar Free sweetener too.
But I like it tart without any sweeteners..
It's great for chicken or pork.
When grilling meat, pork or chicken,
let your meat cook till almost done before
adding the sauce to it. Because tomato based
sauces will burn fast.

I usually add it during the last 10-15 minutes of grilling.
Will keep in the refrigerator for a week or two.

I dip chicken pieces into a small bowl of this ,
or brush on with a pastry brush.
 Don't contaminate all your sauce at the grill,
  just take what you will use at the time and leave the rest to use at the table.

Low Carb Red Lobster Biscuits 1.6 carbs each Grain Free

GRAIN FREE Red Lobster cheese and garlic Biscuits


Grain-Free Red Lobster Biscuits

Modified from the Satisfying Eats Cookbook

Makes about 9 small biscuits or 6 medium biscuits

1 small biscuit: 100 calories, 8 grams of Fat, 1 Net Carb & 3.5 grams of Protein

1/4 cup blanched almond flour (I use Bob's Red Mill)
2 tbsp coconut flour (I use Bob’s Red Mill)
1 tsp baking powder
1/4 tsp garlic powder
1/4 tsp salt
1/4 cup fresh grated Parmesan cheese
1/4 cup heavy cream (or pure sour cream, I use sour cream now)
1 egg, cold
1/2 cup sharp cheddar cheese, grated (around 1 oz)
2 tbsp butter, softened (I used salted)

**Finish with Salted butter & dried or fresh parsley  

Directions

Preheat oven to 350 degrees F.  In a medium bowl, mix dry ingredients. Then add remaining ingredients and mix with a wooden spoon or spatula until well blended.  Use scoop to scoop out dough onto un-greased cookie sheet lined with parchment paper .  Space 2-3 inches a part. Bake for 13-15 minutes for small biscuits and 20 minutes for medium biscuits.  Once out of oven, smear a bit of salted butter and sprinkle with a little parsley. Best served warm.

I made these without the Parmesan Cheese last night, just added a little more of each of the flours to make up the difference. They were wonderful! 

PS Yall better make these!
I bought the coconut and almond stuff just for these and it's worth every penny, I promise.

Diabetes, Low Carb, Atkins and Wheat Belly

The only thing that has ever helped me control diabetes, 
is eating and living the low carb way of life. 
THANK YOU Dr. Atkins!
My doctor is always amazed at my blood work each 3 months I go.
I try to keep my carbs at the Atkins induction rate, 
about 20-30 net carbs a day.
I'm now cutting back on fats too. 
The wheat belly book is a great example 
of why we should not eat wheat or grains or sugar.
It states in the book:
"Wheat is the tobacco to this generation."
It's so true. We Americans are addicted to wheat.
 Next time you go grocery shopping, look at how many people
 are obese and look inside their buggies.
It's amazing! I just want to cry or yell at them what 
they are doing to their selves but most importantly to their kids!!
Wake up America, stop eating grains and sugar!!
Hugs to all. We can do this together.
Just start..... after about a week, you will not crave fattening foods.

Never Ending Battle

These "fat bombs" are so awesome, that I over eat them.
 I think that's why my blood sugar is high again.
 It started running high about the same time as I made my first batch.
Back to basics like I said in yesterdays blog.
No more fat bombs, or all these other new recipes I have found. 
I believe that just normal, easy food,
 like meat and vegetables is the best way to go.
I'll write more tomorrow about my blood sugar numbers. 
today was awful, 179....
It's been running around 100 before the fat bomb recipe...
You can not lose weight when your numbers are high.
ugh.....

Back to Basics, Atkins 101

I've been doing so good the past couple of months.
I'm losing weight and blood sugar numbers have been 
really good too. Till about 2 weeks ago.

I started making all these new "low carb"recipes and 
eating way too much. So today I'm getting back to basics.
Back to counting carbs and writing everything 
(that goes into my mouth) down in my food journal.
I don't do a fancy journal, like on my iPhone,
 I just write it in a spiral notebook.
This always helps!!

Walked on my treadmill already.
Cooked breakfast.
Cleaned the kitchen.
Washed my Moms clothes.
Just the normal stuff. 

For lunch:
Will eat a hot dog with just mustard on it,
 no bread of course
but I may wrap it in a lettuce leaf.
And supper: 
a big ground chuck burger
and a salad with just oil, vinegar and dried Italian seasoning
sprinkled on top.

Maybe some celery for a snack tonight.

Drink lots of water ......

Fat Bombs low carb Chocolate Candy 1.6 net carbs each

Fat Bomb 1.6 carbs each

Ingredients
1 Cup Coconut Oil (melted)
1/2 Cup Peanut Butter (melted)
1 Teaspoon of Stevia or Splenda 
8 Tablespoon Cocoa Powder (unsweetened)
1/2 Cup Salted Butter (melted)=1 stick

Instructions
1. Put all the ingredients into a bowl and mix well 
    until all the ingredients are combined, I just use a whisk.
2. Place a Silicone Brownie Bites on top of a cookie sheet.
    I just used clean plastic egg cartons for this.
3. Pour 2 tbs of mixture into each of the 24 molds
4. Freeze for 30 minutes and enjoy.
    Keep stored in your freezer in zip lock bags.

Notes
1. The Silicone Brownie Bites Pan can be purchased at Michaels Arts & Crafts or Amazon.
2. Once frozen, store in an air-tight container or plastic Ziploc bag
3. You can change the flavour by adding more cocoa powder, cinnamon, coconut butter, or peanut butter.
4. To give the Fat Bombs a nice crunch, add unsweetened shredded coconut or crushed peanuts.

Low Carb Diet is just the food we eat

Diet is just a word that means the food we eat.
I have chosen a low carbohydrate way of eating or diet because I'm diabetic and this diet keeps my blood sugar numbers close to normal. That's important, so I won't have all the symptoms of diabeties. this way of eating has already helped me to lose weight and cut way back on my meds plus I feel so much better!
I eat meats, cheese, salad vegetables and other low carb veggies.
No wheat or sugars or starches at all. Drink lots of water because it's so good for you.

Breakfast example:
eggs, cheese, and bacon.
coffee and water

Lunch:
salad with deli meats added and oil and vinegar dressing.

Supper:
grilled meat, salad, and veggie like cauliflower or broccoli.

looking after aging parents -Alzheimer and dementia


I know this is my "low carb" blog.
BUT
We, my husband and I, took on looking after my parents a year after 
we got married, back in 1995.
My Dad (born in 1910) had Alzheimer disease.
My Mom (born in 1918) just could not look after him in Florida, by herself.
He passed away 2 1/2 years after they came to live with us.
But Daddy's story is different than Mom's.
I'll write more about him later.....

She, my mom, is 95 years old now,
and has been healthy all her long life, till now.
Her body is still healthy, but her mind is going fast.
She can't remember how to do tasks that she's done for years now.
Like fixing her cereal in the morning.
Brushing her teeth (yes she still has her own teeth).
They are so worn out now, but still serve the purpose.
I have to tell her how and when to do everything.
She's like having a 3 year old all over again.

I think she has dementia.
She sees her doctor every 6 months and is healthy.
 OMG, this has been so hard on me and Rick.
Everyday seems worse than the day before.
Rick and I both have health issues.
My mom, Rosamond, may outlive us both.
I'm just venting here today.
Thanks for listening, if anyone's out there.....

Grilled Pork Chops, and Shopping Cheap

Good morning to my low carbing friends. Spring is here finally!
We grill outside almost every day in good weather.
Today it's center cut boneless pork chops.
No , I'm not extravagant at all buying this cut of meat.

We buy the pork loins when they are on sale, 
have them cut and freeze them in freezer bags.
We usually buy 3 or 4 whole loins at about $14.00 a piece.
Rick was in the grocery business for many years
 and has taught me how to shop cheap.
When items are on sale, stock up on them!

We have a freezer full of meats. 
We are very careful about how we freeze it.
I use the vacuum sealer bags when I have them,
 some times I run out and just use the freezer zip locks, 
but be sure you get as much air out as you can and seal really well.
We buy steaks, ground chuck, chicken breast , whole chickens, sea food
usually around 1/2 price or better.
You name it, we have it frozen.

 Back to the chops, I usually marinate them in Dales marinate or,
 some Italian salad dressing,
then get the grill hot and cook on both sides about 5 minutes each.

Wish I had read my own blog! SICK MIND of MINE....

Not Diebetic any more (almost) happy dancing now!!

I sure wish I had read and reread this blog from October 2011, but no..

 I went off this way of eating and went my own sick path for a year. 

Gained 14 pounds back, A1C is out of control. 

But I'm back now, for a month, really sticking with it.

It's NOT worth it, to go astray, not worth it at all!!

 


October 2011:
I just came home from my doctor's appointment, every 3 months,
check up for pain management (spinal stenosis) and diabetes check.
My doctor was amazed!!
No more pain meds prescribed,
cutting one of my diabetic pills in half for 1 week
then stopping it altogether (glucotrol).
She said it causes weight gain, OMG!
Cutting my insulin way way down.
Will go off the metformin in a month or 2. (it's the one that causes awful diarrhea)
She said I will definitely NOT be diabetic much longer, if I kept this up.
She even said that she was going to have to "re-think" her own diet, as a vegetarian.
My A1C was 5.5. she almost fainted..this time last year, it was 8.6.
4.5 to 5 is normal and not diabetic!!!!!
also I had lost 15 pounds since my last visit.
I'm so happy!!! and getting healthier every day,
Thanks to Dr. Atkins and all my low carb friends!
Blood pressure normal also....

Lasagna, zucchini, no noodles, low carb

Ingredients:
2  zucchini, sliced 1/4 inch thick 
 1 lb lean ground beef 
 1/2 cup onion, chopped
  2 small tomatoes, cut up
1 (6 ounce) can tomato paste
  2 garlic clove, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon dried thyme
1/4 cup water
1/4 teaspoon pepper
1 egg
3/4 cup low fat cottage cheese (or low fat or fat free ricotta)
1/2 cup mozzarella cheese, shredded (I use 8 oz. divided)
 
 
Directions:
  Cook zucchini until tender, drain and set aside. Fry meat and onions until meat is brown and onions are tender; drain fat. Add next 8 ingredients and bring to a boil.
  Reduce heat; simmer, uncovered 10 minutes or until reduced to 2 cups.
  In small bowl slightly beat egg.
  Add cottage cheese, half of shredded cheese  
 In (1 1/2-qt.) baking-roasting pan arrange half of the meat mixture.
 Top with half of the zucchini 
and all the cottage cheese mixture.
 Top with remaining meat and zucchini.
  Bake uncovered at 375 degrees F for 30 minutes.
  Sprinkle with remaining cheese. Bake 10 minutes longer.
  Let stand 10 minutes before serving.

Real Greek Salad low carb delicious

  • Yield Serves 4

Ingredients

  • 3 tablespoons lemon juice
  • 3 tablespoons red wine vinegar
  • 3 tablespoons olive oil
  • 2 cloves minced garlic
  • 1 teaspoon each, oregano & parsley (dried)
  • Coarse salt and ground pepper
  • 1 head coarsely chopped lettuce
  • 1 cup tomatoes, chopped
  • 1 medium cucumber, peeled, seeded, and diced
  • 1 small green bell pepper, diced
  • 1 small red onion, diced 
  • 1/2 cup pitted Kalamata olives, roughly chopped
  • 3-6 ounces feta, diced medium
  • Optional,( for the wild at heart only) a teaspoon of minced anchovies 
  • or anchovy paste

Directions

  1. In a large bowl, whisk together lemon juice, vinegar, herbs, garlic and oil. Season with salt and pepper. Add lettuce, tomatoes, cucumber, bell pepper, red onion and olives and toss well to combine. Gently fold in feta.

My Husband is Low Carbing with me!!

I'm sure if you have been eating low carb for any amount of time, 
you know how much it helps to have support close by. 
My awesome husband, Rick, got on board with me a couple of weeks ago. 
He's "kinda" done this before, but he'd whine about missing his cookies, 
crackers and cheetoes.
But this time is so different!
I read to him some of the Wheat Belly book and I really
think that helped make up his mind.

It clicked with him just how poisonous wheat and sugar is to our bodies.
Even the products labeled "gluten free" are BAD for us!
They have more garbage in them that anything!
Anyway, I am thrilled that Rick is with me now, low carb eating all the way!
He keeps me straight and I do him.
We check the carbs in everything we eat. 

I now keep snacks made and ready in a flash in the fridge.
Like deviled eggs, celery, washed and sliced, pickled celery,
olives and goodies like that. It's great to see him excited about loosing weight.
He reached a big goal just yesterday, weighing less than 200!!
And today he lost another pound. So he's really sticking with this way of eating with me.
What a JOY!!

if it comes in a box, don't eat it!
if you can buy it at a drive through window, don't eat it!
if it's advertised on TV, don't eat it.
so true.
Also try to do most of your shopping around the perimeter of the grocery store.
Not much need in going into the middle and down the isles,
 that's where the junk/garbage is!

Better Than Heinz Ketchup Lindas Low Carb recipe

From Lindas Low Carb recipes.
She has the best! I'm posting this for others to make and use.
And so I can find it again. It's delicious!


EVEN BETTER "HEINZ" KETCHUP
6 ounce can tomato paste
8 ounce can tomato sauce
1/4 cup plus 3 tablespoons white vinegar
1/4 cup water, or enough to get the right consistency
1/4 cup granular Splenda or equivalent liquid Splenda
1/2 teaspoon salt
1/4 teaspoon onion powder
1/8 teaspoon allspice
1/8 teaspoon ground cloves
1/8 teaspoon cinnamon
1/8 teaspoon garlic powder

Mix all of the ingredients well. Cover and simmer for 1 hour. Cool then chill before serving. Keep refrigerated.
Makes 2 cups or about 32 tablespoons
Made with granular Splenda:
1 tablespoon: 7 Calories; trace Fat; trace Protein; 2g Carbohydrate; trace Dietary Fiber; 1.5g Net Carbs
1/4 cup: 28 Calories; trace Fat; 1g Protein; 7g Carbohydrate; 1g Dietary Fiber; 6g Net Carbs
1 cup: 112 Calories; trace Fat; 5g Protein; 28.5g Carbohydrate; 5g Dietary Fiber; 23.5g Net Carbs

Made with liquid Splenda:
1 tablespoon: 6 Calories; trace Fat; trace Protein; 2g Carbohydrate; trace Dietary Fiber; 1.5g Net Carbs
1/4 cup: 25 Calories; trace Fat; 1g Protein; 6.5g Carbohydrate; 1.5g Dietary Fiber; 5g Net Carbs
1 cup: 100 Calories; trace Fat; 5g Protein; 25.5g Carbohydrate; 5g Dietary Fiber; 20.5g Net Carbs


I finally had a chance to try some Heinz Reduced Sugar Ketchup (formerly called Heinz One Carb) and wanted to get as close as I could to creating a good copycat ketchup. My biggest stipulation was that I didn't want to have to cook my ketchup. I wanted it to be just as easy to whip up as my previous recipe. I think I've come pretty close to the Heinz. The main things that are missing in my recipe are the deeper, cooked flavor and the excess salt. I decided not to try and copy the saltiness since I thought the Heinz was overly salty. I used 1/2 teaspoon salt, but feel free to try up to a full teaspoon if you want yours to be as salty as the Heinz. I like the consistency and flavor of this version much better than my Better "Heinz" Ketchup. Adding tomato sauce made all the difference. Even if this isn't identical to the Heinz ketchup, I think it tastes very good and I'm happy with the flavor.
In case anyone is interested, I figured out one day that it costs about $.97 to $1.16 to make a batch of this ketchup. I have to pay an average of $2.00 for a 14 ounce bottle of Heinz low carb ketchup depending on where I buy it.
UPDATE 3/16/11: I made a few tweaks to the recipe this time. Except for the salt, I doubled all of the seasonings. I also added the equivalent of another tablespoon of sweetener. The recipe above still calls for the original quantities. I didn't edit it because the recipe is still good made that way. This time I simmered the ketchup on the stove for about 20-30 minutes and I think that helped blend the flavors a little better. It also helps the constency greatly. Cooking gives the ketchup a smoother texture and it doesn't separate and get watery over time like the uncooked version does. I do recommend covering the pot because the ketchup will get too thick otherwise.
UPDATE 5/14/12: To avoid confusion, I've edited the recipe ingredient list and instructions to reflect the way that I now make this recipe. I've also adjusted the nutritional counts.

Crispy Dill Pickles home made


Crispy Dill Pickles: Just Like Klaussen’s

As promised, this is the tried-and-true dill pickle recipe I have used and shared with others for years. They taste just like the Klaussen pickles. I have made them with whole cucumbers and cut cucumbers. My favorite dill pickles are made with the small, whole pickling cucumbers. The cucumbers can be spear-cut, sliced, or cut in chunks — use what you have.
One of the “secrets” to making crispy dill pickles is to cold-pack the pickles in hot, sterilized jars. The other “secret” is to time the water bath precisely.
You will need about 16 4-inch long cucumbers, or 12 large cucumbers that can be chunk-cut or spear-cut.
Update: This recipe uses a hot water bath canning process. Please refer to my post Hot Water Bath Canning: The Basics for a full explanation of this canning process.

DillPickles
Crispy Dill Pickles
  • Cucumbers (see above description)
  • 12 large garlic cloves, peeled
  • 4 heads fresh dill
  • 2 hot red peppers or 1 t. crushed hot red pepper flakes
Brine:
  • 2 1/2 cups white vinegar
  • 2 1/2 cups water
  • 1/4 cup pickling salt
Prepare canning jars and lids (wash, then sterilize).
Chill the cucumbers in a refrigerator overnight if possible. Remove when you are ready to begin cold-packing the cucumbers in the jars.
Wash the cucumbers to remove any debris or garden soil. Leave the small ones whole; with larger cucumbers, cut in chunks, spears, or slices. Pack the chilled cucumbers into 4 sterilized pint jars. To each pint, add 3 whole, peeled cloves of garlic, 1 head dill, and 1/2 hot red pepper (or 1/4 t. pepper flakes).
Make the brine:  Mix the vinegar, water, and pickling salt in a stainless steel saucepan and heat to the boiling point. Pour hot brine over the cucumbers in the jars. Seal and place in a boiling water bath for 5 minutes, marking the time as soon as you put the jars in. If you leave the jars in the boiling water bath longer, they will get soft.
Store processed pickles for several weeks before using.

Pickled Celery low carb no cooking

My Pickled Celery Snack recipe low carb



I made one of my favorite snacks today,
pickled celery.
Here's what you need:

1 quart jar w/lid
1 bunch of celery
1-2 teas. salt
1 teas. dried red pepper flakes
vinegar
water

First I wash the celery and cut the ends off.
(I freeze the discarded tops of celery to use in soups or stews later)
I
cut each piece into 6-8 inch long pieces.
Then slice it down the middle to make thin pieces.
Put celery into a quart jar and add 3 parts vinegar
(just pour vinegar into the jar, over the celery to fill jar 3/4 full)
and then fill the rest with water.
Add about 1- 2 teaspoons of salt or to taste.
I always add dried red pepper flakes also for a little kick.
Put the lid on and shake jar.
Let this sit in fridge over night,
if you can stand waiting, then dig in.
I really love these celery pickles!!
Rick doesn't care for vinegary stuff so I can eat um all, if I want!!

Sometimes I will add sliced radishes, bell peppers, turnips, carrots ...anything like that is good.

If this is too tart for you, add a pack of Splenda to it to cut the vinegar taste.
Also I hope all yall can find pork rinds/pork skins at your local grocery stores.
They have no sugar and no carbs, very tasty crunchy tid-bit snacks!!

Breakfast Casserole low carb

Recipe/breakfast casserole



Brown 1 pound good sausage in frying pan, drain

1/2 cup onion, chopped
1/2 cup bell pepper,chopped
6 eggs,beat with fork or wire wisk
1 cup half & half
1/2 cup water
2 cups cheese, Grated,use your fave
(I used 1 cup Mexican taco cheese & 1 cup mozarella)

I just brown the sausage, drain it.
put it in the bottom of a greased casserole dish.
spread the onions & peppers over it.(I sautéd mine a tiny bit, but you don't have to)
mix all the eggs, half & half, water and cheese together.
pour over meat.
bake at 350 for 45 -60 minutes.

 Mixing the cheese into the eggs makes this so much better than just sprinkling it over the top.
This casserole lasted us 3 days. We just sliced some and reheated in microwave when ever we wanted. It's good at room
temperature.
I got this from a mixture of an old recipe of mine (but it had bread layered on the bottom) and from Kent the low carb master cook!

Parmesan Baked Chicken Tenders low carb recipe

chicken tenders recipe:

1/2 cup mayonnaise
1/2 cup Parmesan cheese
6-10 tenders
 
Spread over chicken and bake @ 425 for 25 minutes.

This is a NO Brainer for sure.
I bake mine on non stick tin foil.
