pickled celery.
Here's what you need:
1 quart jar w/lid
1 bunch of celery
1-2 teas. salt
1 teas. dried red pepper flakes
vinegar
water
First I wash the celery and cut the ends off.
(I freeze the discarded tops of celery to use in soups or stews later)
I cut each piece into 6-8 inch long pieces.
Then slice it down the middle to make thin pieces.
Put celery into a quart jar and add 3 parts vinegar
(just pour vinegar into the jar, over the celery to fill jar 3/4 full)
and then fill the rest with water.
Add about 1- 2 teaspoons of salt or to taste.
I always add dried red pepper flakes also for a little kick.
Put the lid on and shake jar.
Let this sit in fridge over night,
if you can stand waiting, then dig in.
I really love these celery pickles!!
Rick doesn't care for vinegary stuff so I can eat um all, if I want!!
Sometimes I will add sliced radishes, bell peppers, turnips, carrots ...anything like that is good.
If this is too tart for you, add a pack of Splenda to it to cut the vinegar taste.
Also I hope all yall can find pork rinds/pork skins at your local grocery stores.
They have no sugar and no carbs, very tasty crunchy tid-bit snacks!!
