Mexican Lasagna LOW CARB recipe no wheat

Mexican Lasagna

My Good Friend Linda Hargrove Yaun gave me this recipe years ago
1 1/2 pounds of ground beef
(or half ground sausage/ground beef)
1 1/2 teaspoons ground cumin
1 Tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon red pepper
1 teaspoon salt
1 teaspoon black pepper
1 can chopped/diced tomatoes

2 cups cottage cheese
1 cup monteray Jack cheese GRATED (cheese with diced pepper)
1 egg

Brown meat and drain
add spices and tomatoes, heat through.
Pour into 13"X 9"X 2" baking dish
Combine cottage cheese, Monerey Jack Cheese,and egg.
Pour over meat mixture.
Bake @ 350 for 30 minutes.

Serve over lettuce or low carb taco shells.

This stuff is so good, could be used as a dip at a party too!
