Real Greek Salad low carb delicious

Ingredients

  • 3 tablespoons lemon juice
  • 3 tablespoons red wine vinegar
  • 3 tablespoons olive oil
  • 2 cloves minced garlic
  • 1 teaspoon each, oregano & parsley (dried)
  • Coarse salt and ground pepper
  • 1 head coarsely chopped lettuce
  • 1 cup tomatoes, chopped
  • 1 medium cucumber, peeled, seeded, and diced
  • 1 small green bell pepper, diced
  • 1 small red onion, diced 
  • 1/2 cup pitted Kalamata olives, roughly chopped
  • 3-6 ounces feta, diced medium
  • Optional,( for the wild at heart only) a teaspoon of minced anchovies 
  • or anchovy paste

Directions

  1. In a large bowl, whisk together lemon juice, vinegar, herbs, garlic and oil. Season with salt and pepper. Add lettuce, tomatoes, cucumber, bell pepper, red onion and olives and toss well to combine. Gently fold in feta.

My Husband is Low Carbing with me!!

I'm sure if you have been eating low carb for any amount of time, 
you know how much it helps to have support close by. 
My awesome husband, Rick, got on board with me a couple of weeks ago. 
He's "kinda" done this before, but he'd whine about missing his cookies, 
crackers and cheetoes.
But this time is so different!
I read to him some of the Wheat Belly book and I really
think that helped make up his mind.

It clicked with him just how poisonous wheat and sugar is to our bodies.
Even the products labeled "gluten free" are BAD for us!
They have more garbage in them that anything!
Anyway, I am thrilled that Rick is with me now, low carb eating all the way!
He keeps me straight and I do him.
We check the carbs in everything we eat. 

I now keep snacks made and ready in a flash in the fridge.
Like deviled eggs, celery, washed and sliced, pickled celery,
olives and goodies like that. It's great to see him excited about loosing weight.
He reached a big goal just yesterday, weighing less than 200!!
And today he lost another pound. So he's really sticking with this way of eating with me.
What a JOY!!

if it comes in a box, don't eat it!
if you can buy it at a drive through window, don't eat it!
if it's advertised on TV, don't eat it.
so true.
Also try to do most of your shopping around the perimeter of the grocery store.
Not much need in going into the middle and down the isles,
 that's where the junk/garbage is!

Better Than Heinz Ketchup Lindas Low Carb recipe

She has the best! I'm posting this for others to make and use.
And so I can find it again. It's delicious!


EVEN BETTER "HEINZ" KETCHUP
6 ounce can tomato paste
8 ounce can tomato sauce
1/4 cup plus 3 tablespoons white vinegar
1/4 cup water, or enough to get the right consistency
1/4 cup granular Splenda or equivalent liquid Splenda
1/2 teaspoon salt
1/4 teaspoon onion powder
1/8 teaspoon allspice
1/8 teaspoon ground cloves
1/8 teaspoon cinnamon
1/8 teaspoon garlic powder

Mix all of the ingredients well. Cover and simmer for 1 hour. Cool then chill before serving. Keep refrigerated.
Makes 2 cups or about 32 tablespoons

I finally had a chance to try some Heinz Reduced Sugar Ketchup (formerly called Heinz One Carb) and wanted to get as close as I could to creating a good copycat ketchup. My biggest stipulation was that I didn't want to have to cook my ketchup. I wanted it to be just as easy to whip up as my previous recipe. I think I've come pretty close to the Heinz. The main things that are missing in my recipe are the deeper, cooked flavor and the excess salt. I decided not to try and copy the saltiness since I thought the Heinz was overly salty. I used 1/2 teaspoon salt, but feel free to try up to a full teaspoon if you want yours to be as salty as the Heinz. I like the consistency and flavor of this version much better than my Better "Heinz" Ketchup. Adding tomato sauce made all the difference. Even if this isn't identical to the Heinz ketchup, I think it tastes very good and I'm happy with the flavor.
In case anyone is interested, I figured out one day that it costs about $.97 to $1.16 to make a batch of this ketchup. I have to pay an average of $2.00 for a 14 ounce bottle of Heinz low carb ketchup depending on where I buy it.
UPDATE 3/16/11: I made a few tweaks to the recipe this time. Except for the salt, I doubled all of the seasonings. I also added the equivalent of another tablespoon of sweetener. The recipe above still calls for the original quantities. I didn't edit it because the recipe is still good made that way. This time I simmered the ketchup on the stove for about 20-30 minutes and I think that helped blend the flavors a little better. It also helps the constency greatly. Cooking gives the ketchup a smoother texture and it doesn't separate and get watery over time like the uncooked version does. I do recommend covering the pot because the ketchup will get too thick otherwise.
UPDATE 5/14/12: To avoid confusion, I've edited the recipe ingredient list and instructions to reflect the way that I now make this recipe. I've also adjusted the nutritional counts.

Crispy Dill Pickles home made


Crispy Dill Pickles: Just Like Klaussen’s

As promised, this is the tried-and-true dill pickle recipe I have used and shared with others for years. They taste just like the Klaussen pickles. I have made them with whole cucumbers and cut cucumbers. My favorite dill pickles are made with the small, whole pickling cucumbers. The cucumbers can be spear-cut, sliced, or cut in chunks — use what you have.
One of the “secrets” to making crispy dill pickles is to cold-pack the pickles in hot, sterilized jars. The other “secret” is to time the water bath precisely.
You will need about 16 4-inch long cucumbers, or 12 large cucumbers that can be chunk-cut or spear-cut.
Update: This recipe uses a hot water bath canning process. Please refer to my post Hot Water Bath Canning: The Basics for a full explanation of this canning process.

DillPickles
Crispy Dill Pickles
  • Cucumbers (see above description)
  • 12 large garlic cloves, peeled
  • 4 heads fresh dill
  • 2 hot red peppers or 1 t. crushed hot red pepper flakes
Brine:
  • 2 1/2 cups white vinegar
  • 2 1/2 cups water
  • 1/4 cup pickling salt
Prepare canning jars and lids (wash, then sterilize).
Chill the cucumbers in a refrigerator overnight if possible. Remove when you are ready to begin cold-packing the cucumbers in the jars.
Wash the cucumbers to remove any debris or garden soil. Leave the small ones whole; with larger cucumbers, cut in chunks, spears, or slices. Pack the chilled cucumbers into 4 sterilized pint jars. To each pint, add 3 whole, peeled cloves of garlic, 1 head dill, and 1/2 hot red pepper (or 1/4 t. pepper flakes).
Make the brine:  Mix the vinegar, water, and pickling salt in a stainless steel saucepan and heat to the boiling point. Pour hot brine over the cucumbers in the jars. Seal and place in a boiling water bath for 5 minutes, marking the time as soon as you put the jars in. If you leave the jars in the boiling water bath longer, they will get soft.
Store processed pickles for several weeks before using.

Pickled Celery low carb no cooking

My Pickled Celery Snack recipe low carb



I made one of my favorite snacks today,
pickled celery.
Here's what you need:

1 quart jar w/lid
1 bunch of celery
1-2 teas. salt
1 teas. dried red pepper flakes
vinegar
water

First I wash the celery and cut the ends off.
(I freeze the discarded tops of celery to use in soups or stews later)
I
cut each piece into 6-8 inch long pieces.
Then slice it down the middle to make thin pieces.
Put celery into a quart jar and add 3 parts vinegar
(just pour vinegar into the jar, over the celery to fill jar 3/4 full)
and then fill the rest with water.
Add about 1- 2 teaspoons of salt or to taste.
I always add dried red pepper flakes also for a little kick.
Put the lid on and shake jar.
Let this sit in fridge over night,
if you can stand waiting, then dig in.
I really love these celery pickles!!
Rick doesn't care for vinegary stuff so I can eat um all, if I want!!

Sometimes I will add sliced radishes, bell peppers, turnips, carrots ...anything like that is good.

If this is too tart for you, add a pack of Splenda to it to cut the vinegar taste.
Also I hope all yall can find pork rinds/pork skins at your local grocery stores.
They have no sugar and no carbs, very tasty crunchy tid-bit snacks!!

Breakfast Casserole low carb

Recipe/breakfast casserole



Brown 1 pound good sausage in frying pan, drain

1/2 cup onion, chopped
1/2 cup bell pepper,chopped
6 eggs,beat with fork or wire wisk
1 cup half & half
1/2 cup water
2 cups cheese, Grated,use your fave
(I used 1 cup Mexican taco cheese & 1 cup mozarella)

I just brown the sausage, drain it.
put it in the bottom of a greased casserole dish.
spread the onions & peppers over it.(I sautéd mine a tiny bit, but you don't have to)
mix all the eggs, half & half, water and cheese together.
pour over meat.
bake at 350 for 45 -60 minutes.

 Mixing the cheese into the eggs makes this so much better than just sprinkling it over the top.
This casserole lasted us 3 days. We just sliced some and reheated in microwave when ever we wanted. It's good at room
temperature.
I got this from a mixture of an old recipe of mine (but it had bread layered on the bottom) and from Kent the low carb master cook!

Parmesan Baked Chicken Tenders low carb recipe

chicken tenders recipe:

1/2 cup mayonnaise
1/2 cup Parmesan cheese
6-10 tenders
 
Spread over chicken and bake @ 425 for 25 minutes.

This is a NO Brainer for sure.
I bake mine on non stick tin foil.

How To Boil Eggs perfectly

I cook a lot, and have all my life, I'm 62 years old now.
But I didn't learn the right/best way to boil eggs till I was in my 50's!
That's funny/stupid sounding I know.

Here's the way to get the prettiest yellows inside,
 no dark ring in there,
and the whites are not tough either.

Put eggs into a pot, I usually do 6 or 8 at a time.
Cover eggs with cold water, at least 1 inch over the top of the eggs.
Bring to a real  BOIL, boil 3 minutes (time it).
Remove from heat, just slide pot over to a cold part of stove.
Put a lid on the pot.
Let this sit 8 more minutes (time it).
When that time is up, drain the pot in the sink.
Run cold water over the eggs now.
Let them sit to cool some,
then crack and roll on counter,
putting the eggs back into cold water.
Wait a couple more minutes and peel them. 
The shells should come right off easily
and the eggs are perfect inside.
Refrigerate covered.
I put them in zip lock bag.
Or now is the time to make deviled eggs. 

Being fat is hard.
 Dieting is hard.
 Choose one. I have.

Mexican Lasagna LOW CARB recipe no wheat

Mexican Lasagna

My Good Friend Linda Hargrove Yaun gave me this recipe years ago
 
 
1 1/2 pounds of ground beef
(or half ground sausage/ground beef)
1 1/2 teaspoons ground cumin
1 Tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon red pepper
1 teaspoon salt
1 teaspoon black pepper
1 can chopped/diced tomatoes

2 cups cottage cheese
1 cup monteray Jack cheese GRATED (cheese with diced pepper)
1 egg

Brown meat and drain
add spices and tomatoes, heat through.
Pour into 13"X 9"X 2" baking dish
Combine cottage cheese, Monerey Jack Cheese,and egg.
Pour over meat mixture.
Bake @ 350 for 30 minutes.

Serve over lettuce or low carb taco shells.

This stuff is so good, could be used as a dip at a party too!

Zucchini Boats low carb PIZZA or Sausage recipe

Ingredients in original recipe

(I took out the flour,
and added sausage and a few more spices)


  • 3 zucchini, trimmed
  • 2 tablespoons butter
  • 1 cup chopped fresh mushrooms
  • 1/4 cup red bell pepper, chopped
  • 1/4 teaspoon crushed dried oregano
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup grated Parmesan cheese

Directions

  1. Bring a pot of salted water to a boil and cook the zucchini whole until they start to become tender, about 10 minutes. Drain the zucchini, and set aside to cool. Once cool, slice the zucchini in half lengthwise and scoop out the center flesh, leaving a 1/4-inch thick shell around the entire zucchini. Chop the scooped-out zucchini flesh.
  2. Melt the butter in a large skillet over medium heat. Cook and stir the mushrooms and sweet red pepper until tender and the mushrooms release their juice, about 5 minutes. Stir in the flour and oregano, then stir in the reserved chopped zucchini flesh and Monterey Jack cheese. Heat the mixture until the cheese is melted and the filling is hot. Stuff the filling into the hollowed-out zucchini; sprinkle each with about 3/4 tablespoon of Parmesan cheese.
  3. Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
  4. Broil the zucchini until the filling is bubbling and the cheese is browned, 3 to 5 minutes.
New Pizza zucchini boats:
After boiling the zucchini as above,
scoop out innards,
put about
1 tablespoon of Great Value (Wal-Mart brand) pizza sauce inside.
top with grated cheese
top that with pepperoni slices
and grated Parmesan cheese.
Bake about 15-20 minutes at 400 degrees.
I cooked these longer than the top ones because the inside were cooked already in other ones, these I wanted the sauce to get hot and cook into all the other ingredients as well.
These are now my new Pizza favorite food!

Easy Low Carb barbq sauce recipe home made

BBQ Sauce Recipe low carb home made


My recipe for BBQ sauce:





1/2 c vinegar
3 heaping Tablespoons mustard
1 small can tomato sauce
1-2 lemons juiced and I put the sliced peeling in too
1 stick butter
2-3 cloves garlic (minced)
1 teas. red pepper
1 teas. black pepper
1 teas. salt
1/2 c water

Bring to a boil,
stirring, just to melt the butter,
then just take off heat to cool.
I love this and have used it for many years.
You can add your favorite Sugar Free sweetener too.
But I like it tart.
It's great for chicken or pork.
When grilling meat, pork or chicken,
let your meat cook till almost done before
adding the sauce to it. Because tomato based
sauces will burn fast.

I usually add it during the last 10-15 minutes of grilling.
Will keep in the refrigerator for a week or two.

I dip chicken pieces into a small bowl of this ,
or brush on with a pastry brush.
 Don't contaminate all your sauce at the grill,
  just take what you will use at the time and leave the rest to use at the table.

Home Made CHEETOS low carb



Low carb Home Made Cheetos recipe




This recipe is from "Secret Weight Loss Recipes" by Maria Emmerich.

Recipe from this book:
Homemade cheetos ...
1 gram of carb, which is nothing!
3 egg whites
1/8 teas. cream of tartar
a pinch salt
beat this till you have stiff peaks,
add 1/2 cup grated cheese.
whip the eggs whites with wire wisk attached to your electric beater
(if you have those).
Also it helps to have your eggs at room temperature.
This makes them whip up fast and you get lots more volume too.
Spoon them on baking sheet (I used parchment paper).
bake at 300 degrees for 30 minutes, then turn the oven off and let them cool in the oven, I sprinkled some seasoning salt on top,

next time, will add: garlic and red pepper or some lemon pepper!!

I'm re-posting this blog from last year, great recipe, easy too.

I'm wondering what this would be like if instead of cheese, we added some cocoa, & your favorite sweetener ....cookies!!!!!
oh man, I'm gonna try this soon!

I've made the Cheetos 3 times, everyone loves them. I tried piping them the first time, but the egg whites went limp, so I just drop by small spoonfuls now.

Keep It Simple low carb is easy


You can live with any diet longer, I believe,
 if you can just work it into your normal lifestyle.

Steak and Salad low carb eating/baking eggs recipe

Good morning to all you low carbers and wantabees.
Last night we had a wonderful spring evening, so I grilled steaks.
Cooked my Mom a hamburger (her preference).
But we just had steaks, and a simple salad for dinner.
I love Kens Blue Cheese dressing, and only 1 carb per serving.
It makes a great dip also for celery or dill pickles!!

I'm going to try Baking "hard boiled eggs".
325 degrees for 25-30 minutes.
Place into muffin tins so they won't roll around.
Supposed to be tastier and much easier to peel...

I just had my normal 2 eggs and bacon for breakfast,
 it never gets old!

back doing low carb

Good morning all!

Yesterday I had my easy/tasty breakfast of eggs and bacon.

Lunch  I ate leftover salad and blue cheese dressing and 2 boiled eggs
.
Dinner,
I grilled pork chops, I ate 3!
Plus a bowl of steamed broccoli with butter.

Snacks last night:
pork rinds / skins
dipped in Franks Hot Sauce.
Home made dill pickles.

Hope yall are following me again, that really helps me.
Ask questions, I'll try to answer. We are all in this together.

Starting over again

Yesterday I began my Low Carbohydrate journey again.
Sometimes we just fall off the wagon, but the mind set
 was always in there whispering to eat right.
Yesterday

Breakfast:
 I had 2 boiled eggs (4 minutes) with a little salt and butter,
mashed up, don't knock it you've tried it..
 3 thin slices of bacon fried crisp and blotted dry with paper towel.
Coffee
Crystal Lite tea
lots of pills and an insulin shot.

Lunch:
1/2 a home made dill pickle
3 Oscar Myer Beef hot dogs
probably 3 tablespoons of Frenches mustard (YUMM)
1/4 cup left over cole slaw

Dinner:
2 medium sized hamburger patties
about a cup of good steamed broccoli
1 tablespoon butter.

SNACKS:
homemade dill pickle dipped in Ken's Blue Cheese Dressing
my homemade slaw
5 green olives
Crystal Lite Tea



Joan's Cole Slaw recipe:
I use a package of the cabbage, with carrots, fine chopped,
 found in the produce section of grocery store.
First in a bowl I mix the topping,
 about 1/2 cup mayonnaise
1- 2 tablespoons vinegar
3-4 tablespoons of Splenda (optional)
salt pepper
dill weed (dried)
celery seeds (dried)
I mix up the dressing part first and taste, adjust to your liking.
then mix the cabbage into the dressing, cover, and refirgeate.
It will wilt down quite a bit.
but it gets better and better.

Todays menu:Dinner in a Dish with egg noodles

My Husbands favorite dinner is:
DINNER IN A DISH
This is a recipe from my first mother in law, Edith.


about 2 pounds good ground chuck (beef), browned and drained (set aside)
1 large onion chopped
1/2 bell pepper chopped
salt and pepper
1 bag of curly egg noodles cooked and drained (do not rinse, set aside)
2 cans of Campbell's cream of mushroom soup
1/2 can of milk
cheese

I like to cook my bell pepper and onion first in about 1 tablespoon of olive oil, about 10 minutes, pour into a small bowl, set aside.
now brown the ground chuck stirring, drain well, set aside.
cook your noodles in that same pot, with 3 qts water and salt, boil noodles about 7-8 minutes, drain, do not rinse.

next combine, noodles in pot with soups and milk and onion and peppers.
add browned and  drained ground chuck.
stir well
pour into a baking dish (I usually divide & put into 2) freeze one, or give to my son
cover with your favorite grated cheese.
bake in 350 degree oven about 30 minutes uncovered.

I like to serve this with sliced tomatoes
or
a nice green salad
and some brown and serve dinner rolls

but tonight I'm making Bisquick complete mix " Cheese-Garlic Biscuits"
just add 1/2 cup of water to the mix, stir and make drop biscuits.
ready in 15 minutes!
