Real Greek Salad low carb delicious

Greek Salad

  • Yield Serves 4


  • 3 tablespoons lemon juice
  • 3 tablespoons red wine vinegar
  • 3 tablespoons olive oil
  • 2 cloves minced garlic
  • 1 teaspoon each, oregano & parsley (dried)
  • Coarse salt and ground pepper
  • 1 head coarsely chopped lettuce
  • 1 cup tomatoes, chopped
  • 1 medium cucumber, peeled, seeded, and diced
  • 1 small green bell pepper, diced
  • 1 small red onion, diced 
  • 1/2 cup pitted Kalamata olives, roughly chopped
  • 3-6 ounces feta, diced medium
  • Optional,( for the wild at heart only) a teaspoon of minced anchovies 
  • or anchovy paste


  1. In a large bowl, whisk together lemon juice, vinegar, herbs, garlic and oil. Season with salt and pepper. Add lettuce, tomatoes, cucumber, bell pepper, red onion and olives and toss well to combine. Gently fold in feta.
